Spicy Thai Noodle Bowl is an awesome go-to weekday recipe
Ok, you guys. I resisted as long as I could. I had to remake and share this Spicy Thai Noodle bowl with you all this summer!! A recipe that’s sweet, spicy and nutty, balanced with salty and spicy accents. This Instant pot Spicy Thai noodle is the perfect meal for a weekday dinner that comes together in less than 10 minutes. In addition to being so simple to make, these humble spaghetti are the perfect carrier for a homemade, quick and easy, extra peanutty Thai-inspired peanut sauce. So simple to pull together, peanut noodles are a tasty lunch or weeknight meal.
Can I use Spaghetti for making Spicy Thai Noodle?
I used spaghetti for the noodles as it works perfectly and was something I had on hand. If you want to use rice noodles you could definitely use them instead. Both my boys LOVE these noodles. They Could eat it for breakfast, brunch, lunch, snack, and dinner. Not kidding. You can’t beat that on a busy weeknight when you just have to get something on the table, and you want it to be fresh, homemade and most important quick.
This delicious Peanut Noodles recipe tastes so amazing with just a few simple ingredients and it even tastes better than any take out! Make this easy Thai inspired noodle for your friends and family, you can eat right away or serve as a cold noodle salad too!
What vegetables should I add to Spicy Thai Noodles
This noodle recipe is perfect to use up whatever veggies you have on hand in the fridge – I've almost always got bell peppers and some sort of green veggie so those always go in. You can add more fresh veggies to this recipe if you’d like or your choice of veggies. Next time, I might also add some sugar snap peas. Another important thing to note about this Instant Pot Spicy Thai Noodle bowl recipe is that you don't cook the veggies in the Instant Pot on the pressure cooker setting, you throw them in afterward to sort of “steam” them.
A true One Pot / Instant Pot Noodles Recipe
Sometimes what we hate about cooking is that it just takes too much work, am I right ...hmm This is a true one-pot recipe. Noodles are always easy to make, but it also usually requires a pan for sauteing the veggies, a pot for noodles, and a colander for draining. One pot, and no multiple dishes to clean here. Totally my kind of recipe and I am sure you are looking for something like this too! If you like noodles, you should certainly try Vegetable Chow Mein / Lo Mein.
If you want to make this more substantial you can add tofu which will help bulk it up a bit- but with or without, I guarantee you’re going to love it!
Dinner served in about 10 minutes!
How cool is that?!
So are you ready to get started?
Quick and Easy Spicy Thai Noodles Bowl
Let me tell you about how easy this is!
- Add all the sauce ingredients and water in the instant pot and whisk it.
- Add the noodles. (I use these ), Cool
- Add in the veggies
- Mix and enjoy!
How do you spice up noodles?
In your grocery store, you'll come across several different types of "chili sauce" in the Asian section. You can up the spice level of your favorite bowl of Thai Noodles by adding hot spices like chili flakes / Sriracha / Sambal Sauce. Also, if you're a big fan of heat, don't hesitate to double the quantity. I keep it gently spicy as both my boys love this dish and want them to enjoy it, but do make it your own! You can also add a dash of soy sauce in your cup of noodles to give the bowl the needed extra kick of salt and spice.
Spicy Peanut sauce - the key ingredient of Spicy Thai Noodle Recipe
I have to confess. I’m addicted to the peanut sauce. I’m in love. It has such a contrast of crazy flavors that work so well together. This recipe is quick, easy and outstanding
- Organic peanut butter
- Low sodium soy sauce, but for Gluten Free use tamari. ( Regular soy sauce is too salty for me, if you use it you may want to cut down on the amount).
- Garlic/Ginger
- Vinegar
- Pure maple syrup or honey
- & a little or a lot of Sriracha hot sauce
Are you allergic to nuts? Substitute the peanut butter with tahini paste or Sun Butter.
Step by Step Method:
- Add the Peanut butter, soy sauce, rice vinegar, honey, sriracha, ginger, garlic, salt, and water.
- Give it a nice whisk to combine the sauce.
- Divide spaghetti into two batches. Break spaghetti into half and then add to the pot. Add spaghetti to the inner pot in a criss-cross pattern: as shown in the video.
- Using a spatula, push down on spaghetti until submerged in the liquid.
- Close the lid.
- Select the Manual or Pressure Cook mode and adjust the time to 5 minutes (00:05).
- Press ‘Start’.
- When done, quick release of the pressure (QR).
- Open the LID carefully.
- Add the chopped veggies and use a tong to mix it all together nicely, place the lid back on and let sit for 5 minutes. Squeeze in the lime juice and garnish it with some green onions, chopped roasted peanuts and Enjoy!!

STOVE-TOP SPICY THAI NOODLE BOWL
- Cook noodles according to directions listed on the package.
- Meanwhile prepare peanut sauce by combining all sauce ingredients in a mixing bowl, whisking until well blended and smooth.
- Drain Noodle and pour into a large serving bowl.
- Toss in the veggies and pour in the Peanut sauce toss lightly.

Notes
- Make sure you add enough water to cover the noodles and some more. If you find the noodles to be too liquidy/watery, do not worry, allow them to rest for 3 to 5 minutes, and they will absorb the extra liquid.
- A lot of IPs are prone to showing the burn notice, especially the newer models To avoid BURN notice: Make sure that there’s nothing stuck at the bottom before you put on the lid. (You can also make the sauce beforehand in a bowl and whisk it)
- Make sure you add enough water to cover the noodles and some more
- You can add the veggies with spaghetti if you don't care about how firm your veggies are in this Instant -pot spicy Thai noodle bowl. It will all cook all together nicely and save you the hassle of adding the veggies later. It's really up to you.
- Want to make it more filling? You can add your choice of protein ( Tofu ) which will help bulk it up.
- If using Rice noodles the time and water ratio changes. 8oz rice noodles+1-1/2 cup water and 3 mins cook time.QR
- Adjust the spice level according to your taste buds.

Hi! I just made this one tonight after having the printout languish in my bucket stack of recipe printouts since July 21,2019. I like it! I tried to find the video but failed, but that's ok! It turned out very yummy! Thanks for another great recipe!
Liat Gavish says
Hi,
If I use rice noodles, should I use 1.5 cups of water when I make the sauce or is it extra?
Please clarify.
I love this recipe but I need to make it gluten free this time.
Thanks!
Brandy says
Could I use sunflower butter for this recipe with good results?
Soniya Saluja says
Hi Brandy, we have tried it with tahini and sun butter.
Erin says
This recipe is super easy to make and full of flavor! It is my now go to meal at least once a week! Thank you so much for sharing!!
steve says
Just now making this recipe, I'll chime in again once we've eaten it, and noticed a couple things with the way the recipe is worded. I accidentally added the lime juice to the sauce at the start because it was listed under the Peanut Sauce ingredients, I realized after the fact that it wasn't listed in the how to portion for the sauce.
I think it may be beneficial to move the lime juice, onions and chopped peanuts to a "Garnish" category to relieve the confusion. We'll see if it makes a difference in 10-15 min when it comes out. Just thought I would throw out the suggestion.
Also,
The rice wine vinegar is listed as just vinegar in the ingredients, remedied in the instructions, but a little misleading when measuring the ingredients in advance.

Monica says
I'm curious if anyone has made this with the Tinkyada pasta? They are technically rice noodles, but they are not like the Asian style rice noodles. I'm wondering about the cooking time...
Laura says
I doubled the recipe but didn’t see in the comments to add an extra 1/4 of water. It suck to the bottom, burned a little bit and it ruined the taste. Some of the noodles were not fully cooked and there was too little sauce. If I were to try this again, I would make more sauce and probably use rice noodles.
Soniya Saluja says
Hi laura, thanks for sharing your feedback with us.. this will help other readers too. If you are going to use rice noodles.. the time will change to 3 minutes. Check out our pad thai recipe in which we have used rice noodles.
Patricia says

Sue says
Loved the dish, it me of my noodles stuck together despite the criss cross layering. Any suggestions?
Soniya Saluja says
Hi Sue, if it is clamping up even after adding them criss cross way then add 1/4 cup extra water. The extra water will help the noodles separate. Hope this helps!
Nadine says
This was amazing! Thank you! If I were to double the recipe, is the water amount doubled? Simple as that?
This meal made my heart happy!!
Any suggestions on what to do with all the leftover cabbage? :)
Soniya Saluja says
Hi Nadine, reading your comment made my heart happy ❤ if you want to double the recipe simply double the ingredients but add 1/4 extra water... don't ask me the reason :) just done want you to get burnt notice. With the purple cabbage you can make our healthy sandwiches https://thebellyrulesthemind.net/easy-tea-sandwich-recipe/
Or add it to Asian salad.
Soniya Saluja says
Hi Nadine, Thanks for sharing your experience with us...it makes my heart happy to hear that♥️ if you want to double the recipe double the ingredients but add 1/4 cup extra water. The time remains the same :)
With the purple cabbage we have our favorite on our blog that the tea time sandwich ? hope you try it.

Mare says
Great recipe! Sooooo yummy! I did get a burn notice when I added the veggies on the 2nd step. So next time I want to cook the spaghetti and veggies at the same time instead of two steps. So do you set the timer for 10 minutes when you cook everything together then quick release? thanks
Soniya Saluja says
Hi Mare, if you want to cook the vegetables together the time remain the same and yes you ca di a quick release. Add 1/4 cup extra water. Don't worry if there is extra liquid when done. The noodles will soak it up quickly.
Eva says

Nancy Ale says
I made this tonight using broccoli, carrots, red pepper and celery. It was so easy and delicious. Definitely on my make often list. I noticed in the ingredients it lists vinegar and in the directions it says rice vinegar. I used cider vinegar in mine as I didn't see the rice vinegar until I had already added it. Great Recipe. thank you.

Shilpa says
Hi Soniya,
Made this, also involved my 10 yr old while cooking, and who nornally is an extreme picky eater loved these and asked for leftovers as well, so thank you again.
Wanted to make it for a small get together(about 16 people), was wondering what should be the noodle quantity and also was planning to use rice noodles(as some people were gluten free), what should be the pressure cook time and water quantity for rice noodles.
Soniya Saluja says
Hi Shilpa , So glad to hear you experience :) Well If you are planning to make it for a large gathering make it with spaghetti noodles as mention and for your few guest who are gluten free ( make it with rice noodles) but on the stop top . coz the time and water ratio changes . Hope this helps. XOXO
Mimi says
Can you make it with whole wheat pasta? Any time adjustments?
Soniya Saluja says
HI Mimi , No time changes . everything remains the same. If its little under cook when done add 1/4 cup water and cook it ( saute it for few mins without the LID.
Shilpa says
Hello,
Great recipe, just wanted to check, Will the instant pot pressure cook time and quantity of water decrease if we reduce the noodle quantity to maybe 4oz or 6oz instead of 8oz.
Thanks in advance
Soniya Saluja says
Hi Shilpa, Thanks! If you are cutting the recipe in half cut the water in half too. Bit the cook time remains the same. Hope this helps.do share your feedback with us.

This was a huge fail! I used rice noodles, 5 cups of water and got the burn message twice and the noodles disentigrated. Did I miss something?

Grace Stanphill says
The link to the video didn't work. I don't normally need to see the video, but I was confused where it says to divide the noodles into two batches. I can't see anywhere else in the recipe what to do with the second batch. Do you take all 8 oz. of noodles, break them in half and put them on the sauce? THanks. I wan't to try this because it looks delicious.
Soniya Saluja says
Hi Grace, sorry for the confusion! Well you put all 8oz Noodles at once but break them in half and add them in the sauce make sure they are submerged in the liquid (sauce) . The video Recipe is working :) . Hope this helps! Do share your feedback with us after you try it xoxo
