Truth be told, I never liked Bhindi until I tried Kurkuri Bhindi at a restaurant in Mumbai. Before that I despised the slimy texture and every time I tried to make Bhindi I would give up after slimy results. Then I met my husband who is a fan of kurkuri bhindi and if any restaurant had kurkuri bhindi , I knew its coming to our table. That is how our son picked up relishing kurkuri bhindi too as for him it was like eating crispy chips.
In short, now we all love Kurkuri Bhindi and I often make it at home, simply because its so easy and I have tested this recipe so many times mastered the art of getting the perfect texture after several failed attempts.

Kurkuri Bhindi Ingredient Notes
- Bhindi: For the crispiest air fryer bhindi, look for small to medium tender bhindi that are bright green in color, with thin and form pods. Tips that snap easily. I do not reccomend trying this recipe with frozen okra.
- Spices: you will need salt, red chili powder or paprika, coriander powder, chaat masala, turmeric.
- Flours for coating : You will need gram flour and rice flour to coat the bhindis.
Instructions

- Wash, towel dry and trim the edges of the bhindi. Towel drying the bhindi is important or else the bhindi will turn slimy and soggy.
- Slice each bhindi into lengthwise strips,4 to 6 strips from each bhindi. The thinner the crisper.
- Add the bhindi in a large mixing bowl and add the spices - red chili powder or paprika, turmeric, coriander powder, chaat masala, salt.
- Next add the gram flour and rice flours and coat the bhindi evenly with the spices and flours.
- Sprinkle a tablespoon or two of water and coat the masala further. The bhindi shouldn't get soggy, so don't go overboard.
- Preheat air fryer at 375 F.
- Line the air fryer basket with a parchment paper and spread the bhindi in a single layer. Avoid overcrowding so it crisps properly.
- Air fryer for 12-15 minutes. Keep an eye out after 10 minutes as air fryers vary from brand to brand.
- One crispy, sprinkle extra chaat masala and serve immediately with lemon wedges.
- Allow the bhindi to rest for a couple minutes and crisp further before indulging.

Anvita's secret to Crispy Kurkuri Bhindi
- Dry the bhindi before slicing
- Slice thin for maximum crunch
- Try not to skip the rice flour as it really helps crisping the bhindi without any oil.
- Cook in multiple batches of single layers for best results.
Storage & Reheating
Let the bhindi cool completely before storing it in an air tight container or else it will get soggy. To reheat it's best to air fry at 350 F for 3 mins.

How to serve
We like to pair it with my tadke wali toor dal, jeera rice, kachumbar and some dahi on the side or simply with my masala chai.

I like the air-fryer because a lot of have come back into my kitchen. typically these required a lot of frying but we can now enjoy them guilt-free. Yay!!! I had literally stopped making a whole lot of recipes that required frying. So if you fry frequently this could be a healthier alternative.
