I love any form of Halwa. Sooji Halwa, Gajar Halwa and even Badam Halwa. But honestly, I never liked soaking and peeling all those almonds. It felt like too much work, so I stopped making it. Then one day, I realized I could use almond flour instead and still get that tasty badam halwa I love. This shortcut plus making it in the microwave saved me so much time and made it so easy to enjoy this special dessert anytime.
Ingredient Notes
For this recipe, I use blanched almond flour - not almond meal. Blanched almond flour is smooth and light, which helps the halwa turn out creamy and perfect. Almond meal is coarser, so it won't give the same soft texture.
If you don't have almond flour, you can try finely ground blanched almonds or almond meal, but the result might be a bit grainier. Another easy alternative is cashew flour, though the flavor will change slightly.
