Chipotle mayo is one of many great tasting dipping sauces made with regular mayo as the base. The dip is a spicy, Mexican or south western inspired dip that is perfect for French fries, corn ribs, or avocado fries.

To get the flavor right, you will need to have chipotle chilis in adobo sauce. For added boldness, you can add chipotle powder, but that will make it super hot really quickly!
