What is Elderberry Syrup?
Elderberry Syrup is a medicinal decoction made from Sambucus nigra commonly known as elderberries and herbs. The ancient Greeks and Egyptians considered the Elderberry plant as a medicinal chest, because of the wide array of health concerns it seemed to cure. This natural remedy goes way back, and no wonder it is considered as one of the top antiviral remedies.
It's our go-to home remedy to build immunity and fight the common cold and flu symptoms. I like it as a juice syrup, Dr.Mystery likes it in his tea while Little A likes his homemade elderberry gummies.
Elderberry Syrup Benefits
What is elderberry syrup used for? Elderberry Syrup provides the health benefits of the elder plant include naturally improving sinus issues, nerve pain, inflammation, chronic fatigue, allergies, constipation and even cancer. When used within the first 48 hours of onset of symptoms, the extract may even help relieve and shorten the duration of cold and flu symptoms as well.
- Provides cold and flu relief
- Reduces sinus infection symptoms
- Lowers blood sugar
- Acts as a natural diuretic
- Eases allergy symptoms
Why make your own Elderberry Syrup?
- Saves money - It is so much much cost effective to make your own syrup at home than buy from the store. Typically a store bought elderberry syrup costs anywhere from $15 or more for a small 4 oz. bottle. This recipe makes 32 oz. of the syrup for $22. Isn't it so much more economical.
- Customize the taste - Typically elderberry syrup has a strong earthy taste. When you make your own you can customize the flavors. Along with the herbs I like to add some citrus juices to it to make it tasty. Ofcourse I don't mind the extra dose of immunity boosters in there. You can add vanilla, rose petals or even hibiscus if you have them handy.
- Control the sweetness - The store bought syrups are loaded with sugar to mellow down the strong earthy taste of elderberries thus diluting it's nutritional value. I like that I can control the sweetness and still retain it's medicinal value.

How to make the Homemade Instant Pot Elderberry Syrup?
Here is just a gist of the steps involved in the recipe. You can find the detailed recipe along with the ingredient measurements in the recipe card at the bottom of the post.
- Gather the ingredients - Gather the elderberries, the ginger root, cloves, cinnamon sticks, water, orange juice, lemon juice and maple syrup.
- Dump the ingredients - Throw in the above ingredients into the inner pot of the Instant Pot except for the citrus juices and sweetener.
- Pressure Cook - Cover the lid, seal the vent and pressure on high for 15 minutes, allowing the pressure to naturally release.
- Saute - Carefully open the lid and using the saute function reduce the syrup by allowing the syrup to simmer for 15 minutes until the syrup thickens. The consistency of this syrup will be more like a juice syrup and not like the store bought syrups that have sugar added to sweeten and thicken the syrup. This consistency works for us.
- Strain - Add the orange juice and lemon juice now. Then strain the liquid in a glass bowl, pressing the elderberries making sure you extract all the nutrition from them. Allow the syrup to cool. Once the syrup is completely cooled add the maple syrup and mix well.
- Store in a bottle or make elderberry gummies (recipe coming up on the blog next) with this syrup now.
How to store this Instant Pot Elderberry Syrup?
I typically pour the syrup into two 16 oz. mason jars. I refrigerate one while I freeze the other jar. When the first one if over, I thaw the frozen elderberry syrup in the refrigerator overnight and it's ready to be consumed.
If you are an expert at canning, you can also can this recipe.
How long does this Instant Pot Elderberry Syrup last?
Honestly mine lasts for upto 2 weeks in the fridge before I thaw the frozen batch. However if you are canning it, it can last you for a few months.
What is the consistency of this Elderberry Syrup?
This Elderberry syrup is more like a juice syrup when compared to the store bought thickened-with-sugar syrup. This syrup does not have enough sugar to thicken the syrup as it is all natural.
How much Elderberry syrup to take?
Adults : Take 1 teaspoon daily to prevent illness; or if the flu does strike, take 1 teaspoon every 2 to 3 hours, instead of once a day, until symptoms disappear.
Kids : Reduce the dose by half.
