What is Lapsi?
Lapsi is an Indian dessert, typically made out of cracked wheat (daliya), which is cooked in ghee, sweetened with jaggery and garnished with raisins and nuts.
Now I am breaking some norms here and at our home it's a staple breakfast. Depending on what I have handy in my pantry, I often meal prep either cracked wheat or bulgar and we consume it for breakfast. Just like how we consume our Steel Cut Oats. Sometimes as is and sometimes we add milk to it, in either ways, it's yum and always a hit. My 7 year old will request me to make it for his breakfast often.

Lapsi Ingredients
- Cracked Wheat (Daliya) or Bulgar (medium)
- Ghee or oil if your are making it vegan.
- Sweetener - traditionally it's naturally sweetened with jaggery but I have often use palm sugar or even maple syrup. You can even skip the sweetener entirely so if you want to sweeten it with fruits and maple syrup on the top you could do that too. My
- Spices - Cloves and cardamom really enhance the flavors. I have even tweaked the flavors by adding cinnamon sticks or powder, nutmeg & ginger. It's always yum, no matter what you add.
- Raisins and almonds.
- Water.
How to make Lapsi in Instant Pot?
Making Lapsi in the instant pot is really easy. It's literally dumping in the ingredients and setting it to cook while finishing other errands or getting ready during those busy mornings. Here is just a gist of the steps involved. The complete recipe with the measurements is listed in the recipe card below towards the bottom of the post. Step 1: Gather the ingredients - Gather the cracked wheat or bulgar, oil or ghee, spices, almonds, raisins, water and sweetener.
Step 2: Toast the cracked wheat or bulgar - Using the saute function, heat ghee or oil in the inner pot. Once hot, throw whole spices or spice mix or a combination of both along with the cracked wheat or bulgar. Stir and toast the cracked wheat or bulgar for a minute until you get the nutty aroma.
Step 3 : Pressure Cook - Add in the sweetener, raisins and water and pressure cook for 10 minutes followed by allowing the pressure to naturally release. It's takes about 5 minutes for the pressure to build.
Step 4 : Garnish and serve warm or store it.

Using a pot or a pan, follow the same recipe listed for a pressure cooker. Instead of pressure cooking, you will cook the laspi on low heat for about 10 minutes until the water evaporates and the ghee or oil oozes out.
How to serve Lapsi?
Garnish it with nuts and raisins and serve it as a dessert, or enjoy it as a breakfast as is or with milk, or even a side with your Dal Tadka and Rice.
Can I make this Vegan?
Yes use oil instead of ghee. Please do not use olive oil for this recipe.
Is Lapsi Gluten-Free?
No, lapsi is not gluten-free as it's a form of wheat grain. To make this recipe gluten free, you could use Quinoa instead.
How to store Lapsi?
I often make a large batch for the week and store it in the refrigerator in a pyrex container and it stays good for upto a week. Or freeze it freezer friendly ziplocks and it will stay good for upto 3 months. You will just have to warm it enough for the ghee or oil to warm up again.
Can I double or triple this recipe?
Yes you can double or triple the recipe, you don't need to make any adjustments to the time though.
