What are Vada Pav Sliders?
Vada Pav is the famous street food of Mumbai, India. It’s kind of like an Indian burger! The “vada” is a spicy mashed potato ball, deep-fried until crispy. The “pav” is a super soft bread roll. Put them together with some flavorful chutneys, and you get a snack that’s crunchy, spicy, and totally delicious. Vada Pav Sliders are just a mini version, minus the frying and making the ball—making it perfect for parties and sharing!
For me, no trip to Mumbai is complete without relishing Vada Pav several times during the trip. Back during university days, it was a staple from the food stalls outside the campus. When I make them for parties, I love how everyone keeps going back for seconds. Thus lately this has become my go-to party snack.
Let me show you how to make easy Vada Pav sliders for your next party.

Ingredients
You will need sliders/ pavs, potato filling, green chutney, dry red lasun chutney, cheese slices, optionally cheese strings & butter to make these sliders.

How to make Vada Pav Sliders: Step by Step Recipe
- Pressure Cook Potatoes: In the inner pot of the Instant Pot, add a cup of water. Place a trivet on it and arrange the potatoes in a single layer. Close the lid, seal and vent and pressure for 10 minutes followed by a natural pressure release. Allow them to cool and then peel and mash the potatoes.
- Season the potatoes: Heat oil in a pan, and temper it with mustard seeds, green chilies, ginger garlic paste. Once the seeds start to crackle, add the mashed potatoes, turmeric and salt and combine the ingredients well. Add the lemon juice and chopped cilantro, mix and keep the mixture aside.
- Prep the garlic (lasun) chutney: In a dry grinder, add boondi, garlic cloves, ginger, green chilies and red chili powder, grind into a coarse mixture and keep aside.
- Prep the green chutney: In a blender, blitz together fresh cilantro, green chilies, ginger, garlic and salt along with water.
- Assembly: Take a loaf of Pav and slice it into half. On the bottom half spread the green chutney, followed by the potato mixture, lasun chutney, cheese slices and optionally more shredded cheese. Place the top loa of the pav and using a toothpick poke some wholes through out the loaf. Mix some red garlic chutney with butter and using a brush, spread teh garlic butter generously on the loaf. Wrap an aluminum foil and bake in the oven at 350 F for 8-10 minutes until the cheese melts.

How to Meal Prep or Make Ahead Vada Pav Sliders for gatherings
- Make the potato filling, chutneys and pav a day before and keep them in the fridge.
- Simple assemble and bake before the guests come and to keep them warm in the oven set the oven temperature to 180 F.

Easy Vada Pav Sliders : Ultimate Party Appetizer
These mini Indian burgers, vada pav sliders are packed with flavor, super easy to make and an absolute crowd pleaser. Everyone will come back for seconds, these are simply so good!
Ingredients
For Potato Filling
- 5 medium potatoes
- 2 tablespoon oil
- 1 teaspoon mustard seed1/2 teaspoon hing (asafoetida)
- 10 curry leaves
- 2 green chillies chopped
- 1 tap ginger garlic paste
- 1/4 tap turmeric
- Salt to taste
- 2 tablespoon fresh cilantro, chopped
- Juice of half a lemon
For Dry Lasun (Garlic Chutney)
- 12 garlic cloves, peeled
- 1 cup boondi
- 1 teaspoon red chili powder
- Salt to taste ( be mindful of the salt in boondi)
For Green Chutney
- 2 cup freshly chopped cilantro
- 2-3 garlic cloves, peeled
- 1 inch ginger
- 2-3 green chillies (adjust according to taste)
- Salt to taste
- 1/2 lemon juice
- 3-4 ice cubes
- Water 2 tablespoon or as needed
Other
- 12 Pavs
- 12 Pepper Jack or Amul Cheese Slices
- 1 cup shredded cheddar or mozzarella cheese
- Butter
Instructions
