Our crispy air fryer zucchini fritters are some of the best we have ever tasted. We have made them for a long time and have had plenty of time to perfect our recipe. Our families make special requests to have them for dinner or lunch for school or work.
They are that good, even though they contain mostly veggies! That’s right, your kids or picky eaters really won't care that you are serving them veggies because they are deliciously seasoned and have a great crunch to them.
Also, they are a great excuse to enjoy your favorite dipping sauce. And since they contain so little oil, you really won’t need to feel bad that you’re eating so many of them at one time!

Crispy Zucchini Fritters Recipe Ingredients
When you make these delicious, crispy zucchini fritters, you’ll need:
- Zucchini - Look for fresh zucchini that does not have a lot of dents or bruises on it. You can use yellow or green if you prefer.
- Gram or besan flour - You could substitute with another gluten free or regular all purpose flour, but we find the besan flour gives the best crunch.
- Seasonings - We use garlic powder, crushed black pepper, and salt.
- Parsley - You could also use spring onions or cilantro.
- Cooking spray - This helps give the fritters a crispy outside as they cook.
How many Zucchini in a Cup?
Zucchini can vary greatly in size and shape. A rough estimate is that a 2 to 3 medium zucchinis will make about a 1 cup after salting and squeezing them.
If you are looking for a weight estimate, about ½ a pound will make about 1 cup once you salt and squeeze out the extra moisture. See the instructions below on how to do this.
How To Make Crispy Zucchini Fritters (Stove Method)
- First, wash, dry, and grate or shred the zucchini using the larger holes of a grater.
- Next, place the zucchini in a bowl and sprinkle a little salt on them. Allow them to rest for about 15 minutes. During this time, the salt will help suck out extra moisture, which helps make them crispier when you cook them.
- As you wait, set your oven to 350 degrees F.
- After 15 minutes have passed, take small portions of the grated zucchini and use your hands to squeeze out as much water as you can.
- In a medium mixing bowl, combine the zucchini, gram flour, garlic powder, crushed black pepper, and salt into sticky batter.
- When the mixture is ready, line a cookie sheet or flat baking dish with parchment paper and then spray with cooking spray.
- Next, form 10 patties out of the mixture using your hands. You may find scooping them with a measuring spoon helps keep them a uniform size. Place them on the prepared sheet with a little space between and then spray the tops with cooking spray.
