Instant Pot Vegetable Quinoa Soup
Ingredients
- 2 1/2 tablespoon olive oil
- 1Tbsp Italian seasoning
- 1 cup chopped onion
- 1 cup peeled and chopped carrots
- 1 cup chopped celery
- 6 cups low-sodium organic vegetable broth
- 1 cup Quinoa
- 1-1/2 cup tomatoes puree
- Salt and freshly ground black pepper to taste
- 1/2 cup chopped fresh green beans or Asparagus
- 1 chopped zucchini
- 3 cups baby spinach
Instructions
Heat oil in pressure cooker set to Sauté on Normal.
Cook onion, carrots, zucchini , asparagus, celery and baby spinach in hot oil and give it a quick stir.
Add in the tomato puree ,add the quinoa and vegetable stock, add Italian seasoning , salt, pepper to taste .
Lock pressure cooker lid in place and set steam vent to Sealing.
Select Soup/Stew and cook for 3 minutes on High pressure.
Once the cooking cycle has completed, set steam vent to Venting to quick-release pressure.
Stir the soup and season with salt and pepper to serve.

I tried quinoa vegetable soup recipe. It was delicious. Thank you for the instant pot recipes. I had an issue with my instant pot. I set it 4 minutes on soup mode as per the recipe instructions ( the recipe said 3 but I set it 4) but for some reason the 4 minutes timer took for ever to count down. I had to turn off my IP at 2 minutes as it was already more than 45 minutes . Can you let me what may have gone wrong? Other than this, recipe turned out to be super good

Hi Geetha, glad to hear you enjoyed the quinoa soup. Next time do try the tortilla quinoa soup. I can't pin point the reason.. maybe you by mistakenly pressed delay or check the maybe the pressure mode may be it was low.

@Soniya Saluja, maybe the sealing ring wasn't situated correctly. I have this problem sometimes with the aftermarket rings I bought. You'll know because it doesn't get to pressure and then there will be steam releasing along the lid. Hopefully it's not a problem with my your ip itself!

Hello! This recipe is absolutely delicious! I love everything about it, the combination of healthy ingredients, simplicity, and flavour.
My one huge issue though is I can't seem to be able to make this recipe as easily as it says in the recipe. I keep getting the burn signal. The first time I made it I got the burn signal 4 times and never got to ctually cook it. I just ended up eating it undercooked because it had been nearly an hour and I was too hungry. Tonight I am making it again, I followed the quantities very precisely, and the same thing has happened again. My instant pot keeps saying burn. Any suggestions why this is happening? What size instant pot do you have? Thanks!

Hi Julianne, firstly thanks for taking your time out to share your experience with us! We use a 6qt IP for our receipes. I can think of 1 reason for the burn notice...
? tomato puree can be your culprit . We have heard many many people get burnt notice when using tomato puree. We would suggest add the tomato puree last and do not stir. Hopefully you.wont see the burnt sigh again.
