I love it when pineapples are on sale and always grab few because I and my family can go through them pretty fast :P I AM NOT KIDDING! I like adding it to my teriyaki fried rice, quinoa fried rice, Salads, holy moly guacamole too or even just grilling them on the grill. Like many other recipes, one idea led to another and then the next thing I found myself in the kitchen making this JAM. To call it a success doesn’t even cut it. If you do not have this pineapple cutter no worries peel it the old fashioned way. Just make sure you get as many of those little knots out and the seeds that are in those knots.
Do not immediately refrigerate.
Let the jam sit at room temperature for at least 24 hours. This Instant Pot Pineapple Jam is home-made, fresh, small batch jam, with no preservatives or chemicals and requires some settling time. You can store in the refrigerator for up to 3 weeks.
You can also store in the freezer for around 1 year. If frozen, thaw in the refrigerator before using.

Ingredients
- 1 Pineapple (ripe)
- half inch fresh ginger/ grated ( you can skip it if you don't like ginger)
- 1/3 cup raw honey/(use your choice of sweetener for vegan version)
- 1 lime juice - Natural Peticin
Instructions
- Start by making an even-as-you-can cut across the top, to remove it. As you can see in the video
- Place the hollow part of the pineapple corer over the core.
- Once in place, begin turning clockwise while pushing down until you get to the bottom of the pineapple

- Grip the handle and press the black buttons (there’s one on either side) and pull up.
- Add the pineapple rings in the Instant pot . Add the grated ginger, lime juice and honey .
- Close the lid and turn the valve in a Sealing position. Press the "Pressure Cook" or "Manual" button and set the time for 10 minutes on High pressure.
- When its done , quick release the steam. Open the lid and use a high speed immersion blender to make a puree
- Press the Saute button on the Instant Pot and let the pineapple jam cook and thicken . Keep stirring, until thickened to your desired consistency it will take about 10 minutes
Notes
- If you do not have a immersion blender make pineapple puree and then add it in the instant pot (add pineapple chunks/ rings in a food processor and process for several minutes until smooth.)
- Make sure the pineapple is ripe

Hi Eve, YES! Process in a boiling water bath or steam canner 10 minutes. Remove jars and place on a kitchen towel on your counter-top. Let sit 24 hours undisturbed. Jars are sealed when button on lid is fully depressed and won't flex up and down.
Store in pantry up to one year.

Hey there Tammi, to this same recipe I add 1 green jalepano and 1/2 tsp red chili flakes, 1 orange or yellow bell pepper and 1-2 tsp vinegar .add the bell pepper and jalepano with the pineapple add the red chilli flakes while sauteing/reducing it.ps you can deseed the jalapenos too.
