What is a Samosa Chaat?
Samosa chaat is a delicious Indian street food popular in many parts of India. It has a spicy, tangy flavor and is a great way to enjoy samosas at home.
The recipe is made using several components. It has samosas, which are fried dough with a savory filling. It uses chole, which are spicy chickpeas. To top it off, you use homemade yogurt that we make in our Instant Pots, sweet chutney, green chutney, pomegranates, and spices and herbs.
The chaat is bursting with flavor and is a great way to enjoy an authentic Indian street meal at home.
Samosa Chaat Ingredients
When you make samosa chaat, you are really taking several different recipes and combining them into one. This recipe is a great way to enjoy samosas and I recommend you make this when you fry or air fry fresh samosas. Or you could make this using your left overs!
What you’ll need for this recipe include:
- Samosas - you can find our samosa recipe here.
- Chole - another great recipe, it is found here
- Yogurt - you can make your own following this yogurt recipe or use store bought
- Sweet Chutney - you can probably find this at the local Indian store or follow our delicious guava chutney recipe
- Green Chutney - you can use this green chutney recipe or look for it at your local Indian store
- Pink onion - you could use white if that is all you can find
- Green chili - you can skip if you don't want this dish to be spicy
- Chaat masala - the seasoning to enhance the flavors
- Roasted cumin powder
- Red chili powder
- Fresh coriander
- Pomegranate arils - if you don't have them that's ok too, but they sure add a nice juicy burst to each bite
- Nylon sev or bhujia - you should be able to find these at your local Indian store
If you plan to make the components like Samosa or Chole at home, make sure you get the ingredients you need for them too! If you cook a lot of Indian inspired foods, you probably have a lot of them on hand already.

Samosas
- all purpose flour or maida
- salt
- chilled water
- ghee or oil
- caraway seeds
- oil
- medium potatoes
- sweet green peas
- ginger
- garam masala
- cumin seeds

- dried chickpeas
- water
- ghee or oil
- red onions
- ginger paste

- fresh tomato puree
- ginger juliennes
- salt to taste
- Chana or Chole Masala
- bay leaves
- cinnamon stick
- black cardamom pod
- green cardamom pods
- cloves
- black peppercorns
- pomegranate powder
- kasuri methi
- black tea bags
- Ginger juliennes
- Green chili
- Pink onion rings
- cilantro
How to make Samosa Chaat
When getting started, you need to have samosas, chole, yogurt, and sweet and green chutney ready to go. Or you’ll need to make them. The good news is you can make the components a day or two ahead of time and make samosa chaat out of the leftovers.

For more details on making samosas, check out our detailed samosa recipe. For this recipe, I use the air fryer, which makes a healthier version of this fried food.
You start by making the dough using flour, water, and seasonings for the dough. Once the dough is kneaded, you need to let it sit for about an hour in a warm environment.
As the dough rises, you make the stuffing for the samosas. You’ll need to cook the potatoes and spices in a large skillet.
Once the dough is risen and the filling made, you stuff the samosas and then air fry them until they are golden brown. You can make these a day or two ahead of time to save time the day you want to make the samosa chaat.

For more information and tips on making the chole, check out our Chole recipe here. Chole is very easy to make. Start by soaking your chickpeas overnight. This makes them easier to digest.
When you are ready to make the chole, get out your Instant Pot or pressure cooker. You’ll need to saute the spices and onions and then pressure cook the chickpeas. When they are done cooking, remove the tea bags and mash a few of the chickpeas.
For the samosa chaat
When your Samosas and Chole are ready you can start to assemble the samosa chaat. If you plan to make your own homemade green chutney, sweet chutney, or yogurt, you can use our recipes or use store bought versions.
Once everything is ready, follow these steps to assemble.
Scoop a cup of the chole onto a plate. Crush or deconstruct the samosas on top of it.
Next, add sweet chutney, green chutney, and yogurt.
Finally, garnish with pink onions, green chili, chaat masala, chili powder, roasted cumin powder, fresh coriander, pomegranate arils, and sev or bhujia. Serve warm and enjoy!
Pro tips and tricks
- If you plan on making this recipe, make the chutneys, chole, and samosas ahead of time. You could make a large portion of each and use the leftovers to make this recipe.
- You can use store bought chutneys and yogurt, but the best flavor comes from homemade recipes, which we recommend using.
- Assemble the Samosa Chaat just before serving, so you can still enjoy the crunch without the dish getting soggy.
Can I use any type of samosa for samosa chaat recipe?
We have a great samosa recipe that we use for this. If you go to a local Indian restaurant, you could use your leftovers (if you have any) to make the recipe. Any savory samosa should work, but the exact ingredients may change the flavors slightly.
What to serve with Samosa Chaat
Samosa chaat pairs great with chai tea. It is also really not complete without using sweet or green chutney. You could also serve with naan if you want to use it to scoop it up.
How can I make Samosa Chaat vegan?
It is super easy to make this recipe vegan. You just need to use oil instead of ghee in your recipes and substitute the yogurt with a plant plased yogurt.
You can store this recipe for about 3 to 5 days in the refrigerator. To do this, I recommend placing it in an air tight container. Allow the ingredients to cool completely before storing them.
I don’t advise freezing the recipe. It doesn’t reheat well.
Also, I recommend storing the ingredients separately if you have not already assembled it all. The samosas can become soggy when stored with the chole, yogurt, and chutneys.
Yes! You can easily meal prep this entire recipe. You can make the chickpeas, chutneys, and samosas ahead of time. I recommend storing them all separately and putting them together when you are ready to serve the samosa chaat.

- chole 1 cup (click for recipe)
- plain yogurt, whisked 1/2 cup (click for recipe)
- Sweet Chutney 2 tablespoon (click for recipe)
- Green Chutney 2 tablespoon (click for recipe)
- pink onion finely chopped 2 tbsp
- green chili chopped 1/2 tsp
- chaat masala 1/2 tsp
- roasted cumin powder 1/4 tsp
- red chili powder 1/4 tsp
- fresh coriander chopped 1 tbsp
- pomegranate arils 1 tbsp
- nylon sev or bhujia (should be available at Indian store)
Instructions
