What is tindora?

Tindora, known as ivy gourd in English, is found in the tropical climates of Africa and Asia. It is a very popular vegetable in Indian cuisine as a main veggie dish. In some parts of India, they will add it to dals. 

Tindora is known by several different names throughout India. They vary by region and include names such as dondakaya, tendli, kovakkai, and tondi.

The veggies themselves are mostly green with white stripes or lines running over their oval shape. They look a bit like elongated, small watermelons or cucumbers.  

While you can eat them uncooked, most of the time they are placed in recipes with potatoes and spices to give them a tasty flavor that you are sure to enjoy.

Ingredients to make Tindora Sabzi

When you want to make tindora recipe, you’ll need the following ingredients on hand:

  • Tindora - Also known as ivy gourd, you will want to use one that is ripe.
  • Potatoes - You want to use medium sized potatoes cut into chip-like rounds.
  • Oil - You can use olive oil or whatever you have on hand.
  • Besan - A flour made from chickpeas that helps to thicken the juices.
  • Spices:
    • Asafoetida
    • turmeric powder
    • red chili powder
    • cumin powder
    • coriander powder
    • Amchur
    • garlic powder
    • Salt (to taste)
  • For garnish - You’ll want both lemon juice  and cilantro

To make your life easier, you’ll also want to have the following tools on hand:

  • Cutting board
  • Knife
  • Air Fryer or Oven
  • Tongs

How to make Tindora in Air fryer

When you are ready, here’s what you need to do to make tindora fry:

  • First, prepare the tindora and potatoes. To start, remove the circular ends of the tindora and slice it lengthwise into 4 pieces. If the tindora is overripe and slightly reddish, then please discard it. To prepare the potatoes, first peel them. Once they are peeled, cut the circular ends off the potatoes and then slice the remainder of the potatoes to match the tindora.
  • Add the oil, besan, and spices to a large bowl and then mix well. Next, add the tindora and potatoes to the bowl, coat them well with the mixture, and then toss them into the air fryer basket.
  • Set the air fryer for 10 minutes at 375 F, making sure to shake the basket once before the timer goes off.
  • Once ready, garnish the tindora with lime juice and cilantro.

Finally, serve warm with roti, paratha, or dal rice.

  • medium sized potatoes 2, cut like chips
  • oil 3 tbsp
  • besan 2 tbsp
