No fancy ingredients here, although the dressing might sound fancy, trust me it's easy peasy.
Black beans - Bean lovers, raise your hands. If you have been following The Belly Rules The Mind, you will know that we love to use beans in our recipes. Beans are prized for their high protein and fiber content, especially black beans. We like to pressure cook dry beans from scratch as it's so much better and economical when you do that. What are Pichuberries aka Golden Berries aka Gooseberries aka Physalis?
Heard of Pichuberries before? These golden orange berries are a Peruvian superfruit, that are the size and shape of a grape tomato. They are also known as gooseberries, golden berries or even physalis.
Pichuberries are packed with sweet and tart flavors and powerful nutrients like vitamin E, vitamin A, vitamin P, and the B-complex vitamins B1, B6, and B12. Although sweet, Pichuberries have a low glycemic index of 25 and are a powerhouse of antioxidants.
By eating only 3 ounces of this power fruit, you’ll meet 37 percent of your daily required vitamin A, 13 percent of your required niacin, 18 percent of your recommended vitamin C, and 39 percent of your vitamin D requirement. (Percent daily values are based on a 2,000-calorie diet.)
Where can I find Golden Berries aka Pichuberries?
Here in Germany, Golden Berries are easily available in the super market, farmers market or we can pick our own. So here I use fresh gooseberries to make this Vinaigrette. However back in the US, I used to buy them from my local Walmart in the form of Pichuberry Puree. It is available in the Frozen Berry section, where you buy frozen fruit for smoothies etc. This Pichuberry Puree is 100% natural, without any sugars of flavor enhancers. How good is that?
I love how versatile these golden berries are. No only do they taste delicious, but it's like adding a nutrition punch to anything you want, be it smoothies, berry bowls, yogurts, muffin mixes, milks or juices. My favorite is the Pichuberry Vinaigrette.
How to make a delicious Golden Berries / Pichuberry Vinaigrette?
Like I mentioned this is the star of the recipe and it totally enhances the flavors of this Black Bean and Corn Salad. Once you manage to get fresh / frozen Pichuberries all you need to do is throw in some EVOO, Black Pepper, and fresh lemon juice into the blender, give it a blitz and the dressing for the black bean corn salad is ready. Yay, simple see!!!
Black Bean Corn Salad Recipe
Guys making this salad is very easy. You just need to figure out if you want to used home cooked beans or canned beans and source the goooseberries, either fresh or the frozen kit shown above. Once you have these two things in place, the rest is easy. I chop the ingredients, onions, tomatoes, avocados, cilantro. You could even throw in some colored peppers and jalapenos if you have them handy. Since Little A can't tolerate a lot of spice, I skip the Jalapenos when I know he is going to consume this salad too.
Making the dressing is literally throwing in the pichuberries, lemon juice, olive oil black pepper and giving it a blitz.
Mix the two together and cool the salad before serving.
What to Serve this Salad with?
Honestly I enjoy it as is or as a salsa too. Makes a perfect side with any Mexican dish.
Can I Meal Prep this salad?
Yes, absolutely!!! if I know I am prepping for a party or just want to meal prep for the week. I just chop all the ingredients except for onions and cook the beans and keep it all handy in a pyrex container. I throw in the chopped onions, just before serving as if you refrigerate this salad with onions, it will leave the onions odor in your refrigerator.

Ingredients
For the Salad
- 1 cup black beans, cooked
- 1 cup organic corn, cooked
- 1/2 cup red onions, chopped
- 5 grape tomatoes, halved
- 1 avocado, chopped
- 5 cilantro stems
For the Pichuberry / Golden Berry Vinaigrette
- 2 packets Pichuberry Puree, thawed or 1/2 cup of fresh golden berries
- 3 tablespoon EVOO
- 1 teaspoon black pepper
- salt to taste
- 1 teaspoon fresh lemon juice

How to make Pichuberry / Golden Berry Vinaigrette
You can either use fresh pichuberries / golden berries/ gooseberries or physalis. Or you can use the frozen kit shown above.
If using the frozen kit, thaw the frozen Pichuberry puree.
In a blender, toss in the puree, olive oil, black pepper, fresh lemon juice and salt.
Give it a blitz in your blender. If you find the dressing too tart for your taste then add a sweetner like maple syrup or monk fruit to customize the taste you like.
Putting the salad together
In a bowl toss in the chopped ingredients for the salad, like onions, tomatoes, avocados, cilantro, peppers, jalapenos and pour the dressing over just before serving.
Serve it cold.
