What is Parwal?
Parwal or parval are a vining, perennial plant. They produce fruit similar to cucumbers and squash.
Parval aloo is an Indian dish that combines the cucumber/squash-like with potatoes (aloo). When made in the air fryer, it creates a slightly crispy, flavorful treat that makes a perfect side dish, snack, or appetizer.
How is parval different from tindora
Parval is generally thicker and more crisp. It also has larger seeds compared to tindora.

Ingredients to make Parwal Sabji
When you make parval sabji, you’ll need:
- Parwal (ivy gourd) - You’ll want to slice it lengthwise into 4 pieces.
- Potatoes - You will want to cut like chips.
- Oil - You can use your preferred oil.
- Besan - You could use gram flour if you prefer.
- Spices - You’ll want to have asafoetida, turmeric powder, red chilli powder, cumin powder, coriander powder, amchur, garlic powder, and salt (to taste).
- For garnish - You’ll want both lemon juice and cilantro.
When you make parwal, the right tools can make a big difference. We use the following:
- Cutting board
- Knife
- Air Fryer or Oven
- Tongs
How to make Parwal Aloo in Air fryer
When you make parval sabji in the air fryer, follow these easy steps:
- First, prepare the parwal and potatoes. To do this, remove the circular ends of the tindora and slice the tindora lengthwise into 4. If the parwal is overripe and slightly reddish, please discard it. Prepare the potatoes by peeling them and then cut the circular end of the potatoes to make slices of the remainder of the potato.
- In a bowl, add the oil, besan, and spices and then mix well. Next, add the parwal and potatoes to the bowl. Coat them well with the mixture and then toss them into the air fryer basket.
- Air fryer for 10 minutes at 375 F shaking the basket once about halfway through the cooking time.
- Once ready, garnish with lime juice and cilantro.
Finally, serve the disk warm with roti, paratha, or dal rice.
Pro Tips to make the best Parval
When you want to make the best parval ever, follow these easy tips and tricks:
- For even cooking in the air fryer, make sure to shake the basket halfway through cooking.
- Try to make the potato slices as uniform in size as possible.
- Discard overripe, reddish parwal, they won’t work well in the recipe.
FAQs
Parval pairs well with dal tadka and jeera rice. When you pair it with other dishes, you can make a complete meal out of it. Otherwise, it makes a great snack or light meal.
Once it has cooled, you can place the parval aloo in an airtight container, snap it shut, and then store in the fridge for about 2 to 3 days. We don’t recommend freezing this recipe since it gets a bit mushy in the freezer when reheated.
You can make a similar recipe using different types of potatoes. You can also try varying your spices to make it hotter or reduce its spiciness. Or ou can serve it over rice for a more filling meal, or serve on its own as a light meal or snack.
Parwal is often available at Indian grocery stores. You may also be able to find it at certain speciality shops or even some online retailers.

- 2 ½ cups parwal (ivy gourd), slit length wise into 4
- medium sized potatoes 2, cut like chips
- oil 3 tbsp
- besan 2 tablespoon
- asafoetida ¼ teaspoon
- turmeric powder ½ teaspoon
- red chilli powder ½ teaspoon
- cumin powder ½ teaspoon
- coriander powder ½ teaspoon
- amchur ½ teaspoon
- garlic powder 1 teaspoon
- Salt to taste
- Lemon juice for garnish
- Cilantro for garnish
