- First, clean and cut the potatoes into 1 inch squares.
- Next, pour a cup of water into the inner pot of the Instant Pot.
- Add the potato chunks into the steamer basket and then place the steamer basket on a trivet in the inner pot.
- When added, close the lid, seal the vent, and then pressure cook for 6 minutes followed by a natural pressure release.
- In a large bowl, add the potatoes, red pepper, celery, red onion, parsley, and mayo and then mix well.
- Next, mix in the salt, pepper, and yellow mustard.
