  • Yukon gold - You could also use red potatoes, peeled, and cut into about 1 inch cubes.
  • Red pepper - We like red, but you could use any color of bell pepper you like.
  • Green onions - If you can’t find green onions, you could use scallions instead.
  • Celery 
  • Red onion - Red onion gives a great flavor, but a sweet yellow onion could work nicely too.
  • Parsley - This adds a fresh flavor to the salad.
  • Salt - You can omit or add to your taste.
  • Mayo - We use regular mayo, but you can easily make it vegan using vegan mayo instead.
  • Yellow mustard - We love the flavor of yellow mustard, but you could use dijon instead.

When you want to make potato salad in the Instant Pot, follow these easy steps:

  • First, clean and cut the potatoes into 1 inch squares.
  • Next, pour a cup of water into the inner pot of the Instant Pot.
  • Add the potato chunks into the steamer basket and then place the steamer basket on a trivet in the inner pot.
  • When added, close the lid, seal the vent, and then pressure cook for 6 minutes followed by a natural pressure release.

  • In a large bowl, add the potatoes, red pepper, celery, red onion, parsley, and mayo and then mix well.
  • Next, mix in the salt, pepper, and yellow mustard.
  • Finally, chill for an hour before serving.

Best potatoes for potato salad

There are two types of potatoes we recommend: red potatoes or yukon gold. Both of these varieties have a thin skin and a soft, velvety flesh when cooked. 

You can use other varieties, but you will want to look for ones with thinner, waxy skins and avoid ones like russets since they have thicker skins. If you do use russets, we recommend peeling them first.

Whether you leave the skins on is largely a personal choice. Here’s a few things to consider:

  • The skins have some additional nutrients from the potatoes, so leaving them on makes it a bit healthier.

Yes, you need to cut potatoes for potato salad. The best way to do this is to make them into roughly 1 inch cubes before you boil them or cook them in the Instant Pot.

Once they are clean, use a sharp knife to cut about a 1 inch slice off the end of the potato. You can then slice the rest of the potato so that you have about 1 inch thick rounds.

Due to the acidic nature of mayo, the potatoes in potato salad will soften some the longer you keep the salad. While it can soften the potatoes a bit, it is not enough to make the entire potato soft, so you will need to make sure to cook them fully.

You can easily store potato salad in the fridge. To do this, transfer the salad to an air tight container or seal with cling wrap. Once in a sealed container, it should last about 5 days in the fridge.

Can you freeze potato salad?

No. Frozen potato salad will not thaw nicely. The potatoes will get too mushy and the mayo will separate when it comes up to room temperature.
