When we make this we use a combination of dijon mustard and grain mustard. These mustards have great flavor and add a bit of spice and heat to the sauce.
When you are looking for more heat, then you need to try adding the following ingredients:
cayenne powder
paprika
ghost powder
Our recipe for dijon mustard aioli does not require an egg yolk to make it. We find you get plenty of richness from using full fat mayo and do not need an egg yolk.
