If you have been following us for a while, you will know we love to use our Air Fryer every opportunity we get. Makes life so much easier and yields great results. Some of our favorite recipes to make in the Air Fryer are Apple Chips, Banana Chips, Sweet potato fries, lavash bread chips to name a few. It's been a while we roasted some veggies in our Air Fryer thus the Crispy Tender Carrots.

- Carrots - I prefer the carrots from the farmers market instead of the giant thick carrots. The leaner the carrots the better for this recipe. If you can manage to pick evenly sized carrots nothing like it.
- Seasoning - Garlic salt, sugar, chili powder
- Butter / Oil - to coat the carrots with seasoning. Butter definitely enhances the flavor but oil makes a great vegan substitute. Air fryer makes the carrots so much healthier by reducing the amount of oil.
- Cilantro or parsley to garnish.
How to make Air Fryer Carrots?
Here is just a gist of the steps involved to make air fryer carrots. You can find the detailed instructions in the recipe card below.
1 : Gather and prepare the ingredients - Gather the carrots, seasonings, oil and air fryer. Thoroughly wash the carrots and cut them irregularly to get more edges. More like cutting them in the shape of V. I don't peel the carrots as they tend to have a bitter taste, but if you are in the habit of peeling carrots, you can.
2 : Mix ingredients - In a bowl throw in the carrots, oil and seasonings and mix well, making sure they are coated well.
3 : Air fry the carrots - Line the air fryer basket with aluminium foil (the liquid drains down and it gets messy) and arrange the carrots in a single layer in the air fryer basket, making sure you do not over crowd the basket. Air Fry the carrots for 15 minutes at 390 F (200 C) until the edges start getting charred and crispy tender.
4 : Garnish and serve.
How to Air Fry Carrots in Instant Pot using a Crisp Lid?
We love our Mealthy Crisp Lid, it's great to make our cheat meals 'healthier'. It's an electric pressure cooker attachment which makes your electric pressure into an airfryer, crisps food and even dehydrates food. Most of us already have an electric pressure cooker, so if you are short on counter space like me,then this is a great option to have instead of purchasing another gadget to keep on the counter top. We have tested it with many recipes and love the results. If you don't have a crisp lid already you can get it here. If you do have a Crisp Lid, let's get started.
- Follow step 1 and 2 from above.
- Air Fry using a Crisp Lid - Arrange the carrots in a single layer in the frying basket. Place the frying basket on a trivet. Cover and secure the Instant Pot or Mealthy Multipot with the Crisp Lid. Air Fry the carrots for 15 minutes at 390 F (200 C) until the edges start getting charred and crispy tender.
How to roast these carrots in the oven?
- Preheat Oven at 390 F (200 C)
- Follow step 1 and 2 from above as step 2 and 3 for oven.
- Arrange the carrots on a baking sheet in a single layer
- Roast the carrots in the oven at 390 F (200 C) for approximately 40 minutes, turning half way through until the edges are caramelized.
Tips to make the best Air Fryer Carrots
- Pick evenly sized carrots that are lean. These carrots were 1 inch thick in diameter.
- Wash them thoroughly to get rid of any dirt and avoid peeling to the extent possible. Sometimes peeling yields to bitter taste of the carrots. Plus you lose the layer of vitamin D on that carrot.
- Cut them in a way to get as many edges possible.
Variations

Why the aluminum foil? Wouldn't oiling the basket be just as effective? Prefer not to use aluminum foil...

You definitely want to let the carrots come to room temperature before tossing with the butter and spices. Also, you probably want to use a 50/50 mix of melted butter and olive oil.
I used my carrots straight out of the fridge, and the cold caused the melted butter to recongeal. The 15 min was not enough to get caramelized edges, so I am finishing them in the oven.
