- It' so much healthier to make your own Potato Wedges at home from scratch in the air fryer. You know exactly what you are consuming plus you can skip the deep frying. Air Frying uses 80% less oil than frying.
Tips and Tricks for Making the Best Potato Wedges in Air Fryer
- Pick the right potatoes -Which potatoes to pick for Potato Wedges? Well yes, this is important if you want the crispy texture. So I pick between an organic variety of Russet potatoes or White Potatoes for best results. Although you can pick whatever is easily available at home, these will always yield you great results.
- Slice them evenly - If the slices are not even then the potatoes won't cook evenly. Some will cook faster and some will take longer which will result in uneven results. So try to keep them all the same thickness.
- Soak the wedges - This helps release some of the starch and absorbs moisture which results in crispy texture outside. If you are in a rush you can skip this step but will not get super crispy wedges.
- Don't skimp on oil - The wedges need to be coated evenly on all sides. So don't skimp on the oil. The excess will anyways get thrown out into the fryer basket. We are anyways using 80 % less oil than deep frying.
- Season the potatoes - Flavoring them with you favorite herbs and spices will definitely enhance the flavors. I have shared my favorite Potato Wedges seasoning below.
- Arrange them evenly - Please do not over crowd the air fryer with multiple layers of wedges. Arranging them evenly in a single layer is expose each wedge to the heat and result in evenly cooked wedges.
Ingredients for Air Fryer Potato Wedges
Seasoning the potato wedges definitely enhances the flavors. This potato wedges recipe calls for easily available ingredients at home. I like to use a combination of herbs and spices. Below is what I have used in this recipe. If you don't have an ingredient handy that's fine too but this is my best spice blend.
- Garlic Salt
- Smoked Paprika
- Rosemary
- Oregano
- Parsley
So let's make some homemade potato wedges in the air fryer now.
How to cut Potato Wedges
You start with placing the potato on the cutting board on it's sides, meaning length wise. Now using a large chef's knife, you cut it into half length wise to get half ovals. Now place the flat side down and depending on the size of the potato cut it evenly into 4-6 wedges length wise. This will yield you 8 -12 wedges per potato.
How to Air Fry Potato Wedges
Here is a gist of the steps involved in this Potato Wedges recipe. You can find the exact measurements of the ingredients in the recipe card below.
- Slice the Potatoes - Irrespective of the potatoes you pick make sure you wash them thoroughly and slice them into even wedges as I have explained in the paragraph above. You don't need to peel the skin.
- Soak the potatoes and preheat air fryer - As I have explained above in the essential tips, soaking and important so try to soak the sliced wedges into warm water for atleast a minimum of 10 mins if not more. Skipping this step might result in not-so-crispy wedges. You can also start preheating your air fryer at this point at 400 degrees Fahrenheit.
- Make the spice blend - While the potatoes are soaking, quickly keep your seasoning ready. You will need some oil, garlic salt (or garlic power and salt separately), smoked paprika, rosemany, oregano and parsley. If you don't have any herb or spice readily available you can use whatever ingredients you have. Mix it all together and keep is ready.
- Season the wedges - Now evenly coat the wedges with the seasoning.
- Spread them evenly - Spread the wedges evenly in the air fryer basket, keeping the skin of the wedge at the bottom if you can.
- Air Fry the wedges - Now spread the wedges evenly in a single layer in the air fryer basket and air fry them for atleast 15 minutes at 400 degrees Fahrenheit. After minutes minutes check the air fryer to see if you are happy with the crispiness, if you want the wedges a little more crispier you can air fry them for another 5 mins at the same temperature. You don't need to flip or turn them mid way through.
Serve them hot or else like any other fries of wedges they will start becoming soft if not immediately consumed.
How to make Potato Wedges in the Oven?
- Follow step 1 to 4 from above.
- Preheat oven to 400 degrees F.
- Spread them evenly - Arrange them even in a single layer on a large baking tray with the skin side down.
- Bake - Bake for 35 minutes, turning wedges half way through baking time, until golden, crisp and cooked through when tested with a fork
How to Make Crispy Potato Wedges using an Instant Pot Air Fryer Lid or Mealthy CrispLid
We love our Mealthy Crisp Lid, it's great to make our cheat meals ' healthier'. It's an electric pressure cooker attachment which makes your electric pressure into an airfryer, crisps food and even dehydrates food. Most of us already have an electric pressure cooker, so if you are short on counter space like us in Germany, then this is a great option to have instead of purchasing another gadget to keep on the counter top. We have tested it with many recipes and love the results. If you don't have a crisp lid already you can get it here. If you do have a Crisp Lid, let's get started.
- Follow step 1 to 4 from above.
- Place the steamer rack in the inner pot of the Instant Pot or Mealthy Pot.
- Place the wire basket on the steamer rack.
- Evenly place the seasoned potato wedges in a single layer on the wire basket.
- Set CrispLid on top of inner steel pot and plug in. Set to 400°F (200°C) and cook potatoes for 15 minutes. Lift the lid using the handle and set it on the silicone mat. Repeat with remaining wedges.

If you are using freshly cut potato wedges like this recipe then you need to cook them for 15 -20 minutes in the air fryer, depending on how crispy you like your wedges.
Can you put frozen wedges in the air fryer?
I have tried them only once and I cooked for almost about the same time and at the same temperature as freshly cut potato wedges. 15-20 mins at 400 degrees F. You don't need to thaw the wedges.

Air Fryer Potato Wedges

Place the wire basket on the steamer rack.
Evenly place the seasoned potato wedges in a single layer on the wire basket.
Set CrispLid on top of inner steel pot and plug in. Set to 400°F (200°C) and cook potatoes for 15 minutes. Lift the lid using the handle and set it on the silicone mat. Repeat with remaining wedges.
