Our families love spicy potato soft tacos! They make the perfect dinner, lunch, or breakfast.
This is one of our faster meals, meaning you just need to prep the potatoes with a blast of heat or prepare them per their package instructions. This is a great leftover meal or just a fast dinner any night of the week.
We add a homemade avocado crema sauce and cilantro for a fresh, somewhat spicy flavor. You can also add as many taco fixings as you like to make them your own!

When you are ready to make spicy potato soft tacos, here’s what you want to have on hand:
- Wheat or corn tortilla - Wheat tortillas tend to be more flexible while corn ones tend to be a bit more brittle. You can also use hard taco shells if you like (of course, they won’t be “soft” any more if you do, but that’s OK).
- Iceberg lettuce - You could use shredded romaine or other types of lettuce if you prefer.
- Shredded cheddar cheese - If you have a preferred Mexican-inspired cheese, you can use that instead or use a cheese sauce.
- Breakfast Potatoes - You can make your own and use leftovers or use premade versions you can find in your local store.
For garnish, we use both finely chopped cilantro and our delicious avocado crema for garnish.

When you want an easy spicy potato soft taco, follow these easy steps:
- First, prepare the breakfast potatoes. If using left over breakfast potatoes then, you could warm them in the microwave for about 30 to 60 seconds or until warmed through.
- Next, heat your shells in the microwave for about 30 seconds. When you use corn tortillas, this also helps to soften them and make them a bit more flexible.
- Once the potatoes and shells are ready, scoop in about 3 tablespoons of potatoes into each tortilla.
- Finally, top with avocado crema, top with shredded lettuce, cheese, and cilantro. You can also add additional toppings if you like.

When we make these soft potato tacos, we use our own avocado crema sauce as a fresh topping. If you don’t want to make your own following our easy recipe, you can use different sauces like:
- Mild, medium, or hot taco sauce
- Mild, medium, or hot salsas, like cucumber salsa, mango, regular, or your favorite variety
- Cheese sauce
- Avocado creama
- Sriracha Aioli

Ingredients
- white or corn tortilla 4
- iceberg lettuce 1 cup shredded
- shredded cheddar cheese ½ cup
- Breakfast Potatoes (click for recipe) 16 oz.potatoes
- Cilantro, finely chopped for garnish.
Avocado crema for garnish
- ripe avocados 2
- sour cream or thick greek yogurt 1/3 cup
- freshly squeezed lime juice 3 tbsp
- cilantro leaves ¼ cup
- kosher salt ¾ tsp
- garlic cloves 3
- chopped parsley or rosemary or cilantro to garnsish
