Do you prefer the deep-fried crunch of egg rolls over the lighter snap of vegetable spring rolls? Well, my friends, you are not alone. I love egg rolls- especially southwest egg rolls- but I hate that most egg rolls are deep-fried.
With an Air fryer, you can have the crunchiest southwest egg rolls that will give you the same yummy crunch as deep-frying does but without all the added fat. An air fryer cooks food by surrounding the food with a super hot flow of air. This superheated air yields food that has a similar taste and texture to its deep-fried counterparts without the added fat and calories from oil. Plus air fryers are so easy to use when you get the hang of them and are perfect for fuss-free cooking.
WHAT ARE SOUTHWEST EGG ROLLS?
Southwest egg rolls take all the bold southwestern flavors we love so much and wrap them up in a crispy egg roll wrapper. You see all sorts of variations on southwest egg rolls. My vegetarian southwest egg rolls get stuffed with a zesty mix of cheese, vegetables, and seasonings.
WHAT IS THE SOUTHWEST FILLING MADE OF?
My southwest vegetarian egg rolls have a yummy, veggie-packed filling. The tasty filling has:
- Black beans
- Corn
- Red bell pepper
- Green bell pepper
- Red onion
- Green onion
- Jalapenos
- Cheese
- Taco seasoning
This particular blend of vegetables is so scrumptious. The corn and red bell pepper give it a touch of sweetness, while the jalapeno gives heat. The red onions and green onions lend a nice oniony sharpness and the black beans and cheese both give the filling creaminess.

Southwest egg rolls make a delicious starter on taco night or with my vegetarian burrito bowls, but I have to say I love them as a game night appetizer. They provide a healthy tasty snack to munch on while you root on your favorite team with your friends. Plus, since they aren’t fried in oil, you can feel good about this game night snack.
HOW DO YOU MAKE VEGETARIAN SOUTHWEST EGG ROLLS?
Making southwest egg rolls isn’t as hard as you might think. To make these vegetarian egg rolls, start by finely dicing your peppers and onion. Mix the chopped peppers and onion with the black beans, corn, cheese, and taco seasoning. When everything is evenly mixed, you can fill your egg roll wrappers. Now you’re ready to cook your egg rolls. To cook egg rolls in the air fryer, add the egg rolls in small batches to the air fryer and cook them for 12 minutes per batch. Turn them halfway through the cooking process.
HOW DO YOU FOLD THE EGG ROLLS?
To fill your egg roll wrappers, lay a wrapper on a flat workspace. Spoon about 2 tablespoons of the filling into the center of the wrapper.Then, fold the top corner of the wrapper over the filling, tucking the tip of corner under filling. Secure the filling in the egg roll by folding the left and right corners over filling.
Finish the egg roll, by lightly brushing the remaining corner with water and tightly rolling the filled end toward the remaining corner. Gently press to seal the egg roll together. Repeat this process with each egg roll wrapper. When you have filled all the egg rolls, you can lightly spray all sides of the egg rolls with oil.
PRO TIPS AND TRICKS FOR THE BEST AIR FRYER EGG ROLLS
- Be sure the edges of the egg rolls are sealed well so the filling doesn’t fall out. I like to brush the edge with water and press it down to seal it.
- While you don’t need a lot of oil to make these air fryer egg rolls, you do want to make sure you add spray them with oil. The little bit of oil helps the outside of the egg rolls get nice and crispy.
- Make sure you leave some space between the egg rolls in the air fryer. If the egg rolls are touching each other, the air can’t circulate properly in the fryer and they may not cook evenly.
I DON’T HAVE AN AIR FRYER. CAN I STILL MAKE THESE EGG ROLLS?
Yes! While I love how crunchy and crispy these egg rolls get in an air fryer if you don’t have an air fryer you can cook them in your oven. To make them in your oven, make the vegetarian egg rolls as described above. Then transfer the egg rolls to a cooking sheet that you’ve sprayed with oil or nonstick spray. Bake them in a 400-degree oven for 16 to 18 minutes or until the egg rolls are perfectly brown. Make sure you turn them once halfway through the cooking time.
How can I make this Gluten-free?
Traditionally people make egg or spring rolls in spring roll wrappers that you can purchase in the supermarkets. Although they are delicious, they do add extra carbs to our bodies. Give these coconut wraps a try. These coconut wraps smell so fragrant with a light toasty coconut flavor and the texture of the wraps is simply fabulous – not too soft/fragile and not too dry/stiff.
CAN I MAKE THESE VEGETARIAN EGG ROLLS VEGAN?
With a few easy changes, you can absolutely turn these vegetarian egg rolls into vegan southwest egg rolls. To make these vegan, omit the cheese or substitute in vegan cheese instead. You could also add in tofu or rice if you’d like.
CAN I MAKE THESE EGG ROLLS AHEAD OF TIME?
If you want to get a jump on making these egg rolls ahead of time, you can absolutely make the filling in advance. However, I would wait to assemble and cook the egg rolls until you are ready to serve them. If you put them together ahead of time, the egg rolls may get soggy and cause the wrappers to break.
DO THESE VEGETARIAN EGG ROLLS FREEZE WELL?
Yes! If you want to freeze these southwest egg rolls, prepare the filling and fill the egg rolls. Make sure to tightly roll them. Then put the filled, uncooked egg rolls on a baking sheet that’s been lined with parchment paper. Once they are frozen, transfer them to freezer bags. You don’t need to thaw them prior to cooking but you do need to add a few extra minutes of cook time when you air fry them.
WHAT IS THE BEST DIP FOR THESE SOUTHWEST EGG ROLLS?
Serve these egg rolls with any dip you like but I really love this avocado dressing. Thick & creamy. Ready in 5 minutes. Trust me you are going to be hooked onto this!!!

Ingredients
- 1/2 cup finely diced red bell pepper
- Half (1/2) cup finely diced green bell pepper
- 1/2 cup finely chopped red onion
- One(1) cup corn kernels
- 1 cup black beans
- Half Cup(1/2) cup sliced green onions
- 2 minced jalapeno peppers
- Salt to taste
- 2 cups shredded 4 cheese blend
- 3 tablespoon taco seasoning
- 1 package egg roll wrappers
- oil for spraying
Instructions
Prepare the Egg rolls
Stir together black beans, corn, green bell pepper, red bell pepper, cheese, green onions, and taco seasonings in a large bowl and give it a nice mix. Spoon about 2 tablespoon mixture in center of each egg roll wrapper. Fold the top corner of the wrapper over filling, tucking the tip of corner under filling; fold left and right corners overfilling. Lightly brush remaining corner with water tightly roll filled end toward the remaining corner, and gently press to seal.
Repeat the process with the remaining filling and egg roll wrappers.
Spray all sides of the egg rolls with oil using your fingers or spray to evenly coat.

Transfer the egg rolls to the baking sheet and cook until browned and crisp, about 16 to 18 minutes, turning halfway.
Mealthy Crisplid
Place egg rolls in a single layer in prepared CrispLid air fryer basket, working in batches as needed. Spray egg rolls with cooking spray. Set CrispLid trivet in inner steel pot of pressure cooker and set fryer basket on top of the trivet.
Set CrispLid on top of the inner steel pot and plugin. Set to 400°F (200°C) and cook for 6 minutes; flip egg rolls and cook for 6 minutes more. Lift the lid using the handle and set it on the silicone mat. Repeat with remaining egg rolls.

I tried the recommended coconut wraps for the gluten free option. They were burning in the air fryer after just a few minutes. I do not recommend using those for this recipe, or maybe I did something wrong.

@Emily, I’m making them now lol. One cup is slightly less than an entire can in both cases. I’d recommend not using an entire can as I’ve made them before. It makes a lot of filling! If you do add it I’d increase the quantity of everything else including the wraps. These are really good!

Hi Amber, yes you can use wonton wraps ... you might need to increase the time as they are thicker... add few and play around with the time to get the perfect texture. Hope this helps .

Hi Roahni, these eggrolls are vegan. We have not suggested to brush then with egg.. just spray some oil . Hope this helps.
